"Diabetic Cookies" which I am renaming "Color Your Rainbow Cookies" (much better and way more fun to say to the kids! Last weekend we made them with Grandma Jane....
Jaymeson loved how bright the color was! And you can change the color up each time by choosing a different flavor of "Sugar Free Jello" and they smelled good even BEFORE cooking them!
So Grandma and him stirred and stirred. Then he got to help roll them out and cut them out and BOY was he proud of him cookies! If you wanna check out more pictures of Grandma and Jaymeson making cookies check me out on Facebook (Lisa Warren Mann). And below you will find the recipe:
"Color Your Rainbow Cookies"
1 3/4c Flour
1/2 tsp Baking Powder
3/4c Butter
1 pkg Sugar Free Jello (any flavor)
1 egg
1 tsp Vanilla
Cream Butter. Spoon into Jello, Egg and Vanilla. Add Flour and Baking Powder. Roll out dough 1/2" thick and cut into shapes. (we like the stars...hehe)
Bake at 350* F for 8 min (do not over cook)
We also made a batch where we rolled them into balls and used a fork to flatten as you would a peanut butter cookie, I actually liked them better this way. If you do this cook them for 10 min as they are thicker! ENJOY! Let me know what you think when you make them!
